So after posting a few decadent recipes recently, such as coconut cake and peanut butter bacon rice krispies treats, this will be a post that focuses on healthier things: a fresh salad and delicious ways to stay hydrated. We all need a little balance in life, and my balance involves balancing cake and salads.
I made a super easy fresh salad for dinner today that takes all of 10 minutes to put together and is such a nice change from the typical lettuce salads. It is made up of carrots and daikon radishes.
I’ve actually never seen or had a daikon radish until last week when it showed up in our CSA. I had to do some googling to figure out what to do with these things. Daikon is a very mild tasting radish and can be eaten just like carrots – raw or cooked. So I paired them together with a very simple Asian dressing and the result was delicious. {Scroll down for the recipe.}
As great as this salad is, let’s talk about the fun part of this post – the water bottle giveaway! Daikon Carrot Salad
Makes: 3-4 servings. Total time: 10 minutes.
- 2 daikon radishes
- 2 medium-large carrots
- 1 tablespoon sesame seed oil
- 1 tablespoon rice vinegar
- 1 large garlic clove, minced
- 1 x 1 inch piece of ginger, peeled and grated
- Salt & Pepper to taste
- 1 tablespoon sesame seeds
- Clean and peel the daikon radishes and carrots. Using a vegetable peeler, ‘shave’ slices of the radish and the carrots. This is easiest to do by pressing the vegetable against a cutting board and using the peeler to slice away from your body. Place these in a large bowl.
- In a small bowl, combine the sesame oil, vinegar, minced garlic clove, and grated ginger. Add some salt (1/4 – 1/2 teaspoon) and pepper to taste. Combine the dressing with the sliced daikon and carrots, add the sesame seeds, and mix well.
